what I ate #20

I've been eating well in the new year! (I know you were concerned!) 2015, thus far has been all about parlaying one meal into an entirely different  meal…….let me prove my point:

Once morning's buttermilk biscuits…. (by the way, I've made my share of buttermilk biscuits and these are by far the easiest most low maintenance biscuit I've ever come across)



Become tomorrow's egg sandwich. 





becomes tomorrow bahn mi! (With a leftover broth dipping sauce)



I've also been loving baked sweet potatoes for breakfast. Just cube, drizzle with bacon fat, salt and pepper and whole, fresh sage leaves and bake at 350 degrees for 20 minutes!


But the home run discovery this month has been this crispy salmon with with strawberry basil salsa!!!


All this and we're not even two weeks out yet!!!
