I took my inspiration for this salad from this recipe by Sprouted Kitchen.
Roasted and Raw Salad
1 bunch broccolini, chopped
1 chopped leek
6 kale leaves, chopped
juice from 1/2 lemon
red pepper flakes
salt and pepper
Cover the broccolini and leek with olive oil and salt and pepper and roast for 15 minutes at 450 degrees.
Chop the kale and place in bowl with the sliced avocado and parsley.
When broccolini and leeks are done, mix with the kale bowl.
Add oil, vinegar, lemon juice, red pepper flakes and salt and pepper to taste.
