Textured salad: kale, pomegranate and apple

This is a light, fresh and easy salad to make and the best part is, it's full of so many different textures and tastes!

1 bunch of kale (any variety will do)
1/2 large apple (my favorite for this salad is Arkansas black)
1/2 pomegranate (or equivalent of 1/2 cup of fresh pomegranate seeds)
1/4 cup crumbled feta cheese
2 tablespoon avocado oil (or olive oil)
2 tablespoon balsamic vinegar
juice from 1/2 a lemon
salt and pepper to taste

Remove kale from ribs. Wash and pat dry. Cut or break into bite sized chunks. Core and cut apple into bite sized chunks. Remove seeds from 1/2 pomegranate (the easiest way to do this is in a bowl of water in the'll make much less of a mess and the seeds are easier to remove.) Place kale, apple and seeds in a bowl. Crumble feta cheese on top. In a much smaller bowl, combine oil, vinegar and  lemon juice. Mix well and pour over salad. Toss salad and add salt and pepper to taste. Enjoy the party in your mouth!

  3. That's a lot of excellent nutrients in one bowl! I have made kale chips, but not kale salad. I really want to try that. Thanks for sharing!

  4. YUM! I brought it to a potluck dinner... It was delish! I got a lot of requests for the recipe and they thought i couldn't cook hah.
