I drink a lot of almond milk, in fact, it's pretty much the only milk I drink (with granola, in my coffee and tea, in soups and baked goods). So with my Vitamix in hand, I tried making my own batch of almond milk and I have to say it came out pretty great! I don't know that it's more economic than buying the boxes of almond milk, but I will say that there are a whole lot more ingredients in the boxed almond milk than in my version!
1 1/2 cups whole almonds
6 cups water
1 tablespoon agave
1 teaspoon vanilla
Soak almonds overnight in water.
Drain the next morning.
Blend with 6 cups of water. (for my blender, this was about 2 minutes).
add agave and vanilla.
Fold cheese cloth so it's overlapping (one layer won't do the trick, you need it to layer 2 or 3 times) over a wide bowl.
Pour the almond milk over the cheese cloth. The cheese cloth will catch the thicker parts and let the good milk drain into the bowl. (you can keep the thick part to make almond meal - though I haven't tried this yet).
Jar it up! I keep mine in the fridge up to a week.
