I get hungry around 3 every day. Not the "I could eat a few almonds and be satisfied" kind of hungry, but sort of ravenously hungry.
Trying to reconcile my afternoon slump with my new resolve to eat healthy is challenging. But today, I came up with this snack (although it could pass as a light meal) that has everything you need: whole grain carbs, leafy greens, protein (hummus) and healthy fats (avocado and olive oil).
I present to you my Afternoon Slump Snack: Tortilla and Greens
-Whole Wheat tortilla
-hummus (I like the kind that also has olives in it)
-spinach (or other leafy green)
Begin by lightly toasting your tortilla. This gives it a crunchier texture which works nicely with the smooth hummus.
Spread hummus across the tortilla.
Top with greens.
Slice and spread the avocado on top
Drizzle in a little bit of olive oil.
Squeeze 1/4 of a lemon on top.
Sprinkle with pepper and cayenne pepper for a little kick
Then happily get through your afternoon!
