GUEST BLOG: Snack Bars with Simply Sweet Home


It is with excitement and a sweet tooth that I introduce you to our final guest blogger for this week, Jerri from Simply Sweet Home (but there’s still three more weeks of fun at Back to School Month!!!)

Hi Meremade readers!  I'm Jerri from Simply Sweet Home, and I'm really excited to be here for Back to School Month. My blog features recipes, product reviews and giveaways, as well as home decor, crafts, and basically anything that can help make your home a "simply sweet" home.  I also have a linky party called Friday Favorites where I invite you to link up your own recipes and projects.

Today I've got a great recipe to share with you for some Chocolate Peanut Butter Cereal Bars. I've seen several recipes for cereal bars and granola bars throughout the blogosphere, so over the weekend I decided to invent my own!

Cereal bars are a great school (or after school) snack, and they're also a great mom-snack too!  And the great thing about making your own is that you can tailor them to fit your family's tastes and nutritional needs.

Recipe for Chocolate Peanut Butter Cereal Bars:

1/2 stick butter
1/4 cup honey
1/4 cup peanut butter
1/4-1/3 cup light brown sugar
1/4 cup semisweet chocolate chips
1 cup instant oatmeal
1 cup Rice Krispies
1/4 cup nuts
1/4 cup M&Ms (or your choice of topping)

Directions: Place honey, butter, and peanut butter in a bowl.  Heat in the microwave for 15-30 seconds or until butter is melted. Stir with a spoon until well blended.  Stir in brown sugar and microwave for an additional 30 seconds or until brown sugar is dissolved.

Stir in chocolate chips. (Mix should be hot enough at this point to melt the chocolate chips, but if not, just microwave for a few more seconds.  Stir in oatmeal and cereal until well coated. (If the mix is too dry, you can add a small amount of honey or peanut butter. If too wet, add additional oatmeal or cereal.)

Press into an 8x8 pan.  Sprinkle M&Ms or your choice of topping on top and lightly press them into the mixture. Chill in freezer for about an hour. Cut into bars and wrap each bar with plastic wrap. Makes 10 bars.

  2. Thanks so much, Jerri! I showed my boys a picture of the bars this morning and they have been asking me about them all day! Guess I know what I'll be doing come Saturday morning!!
